The Problem With Most "Vitamin C"
Pick up almost any vitamin C supplement and read the ingredient list: ascorbic acid. That's it. What the Research Shows

The clearest human data comes from a 1988 study in the American Journal of Clinical Nutrition. Researchers gave eight fasting adults a 500 mg dose of vitamin C, either as plain synthetic ascorbic acid or as a citrus extract containing the same dose plus natural bioflavonoids. The citrus-extract form was 35% more absorbed than synthetic ascorbic acid alone (p < 0.001), and it was absorbed more slowly — closer to how the body handles vitamin C from food (Vinson & Bose, 1988).
A 2011 crossover trial in Biological & Pharmaceutical Bulletin tested acerola juice specifically. Healthy adults given ascorbic acid inside acerola juice showed higher plasma vitamin C and significantly less vitamin C lost in urine than the same dose taken as isolated ascorbic acid — evidence the body was retaining more of it, not just absorbing it faster (Uchida et al., 2011).
A 2020 lab study helps explain why. Researchers publishing in the Journal of Nutritional Science and Vitaminology incubated human intestinal (Caco-2) cells with ascorbic acid alone or ascorbic acid in acerola juice. The acerola-juice cells took up significantly more vitamin C over 24 hours and showed higher expression of SVCT1 — the gene for the transporter that pulls vitamin C into cells. Two of acerola's polyphenols, quercetin and cyanidin-3-glucoside, drove that effect on their own (Takino et al., 2020).
To be fair to the other side: a widely cited 2013 review in Nutrients found that most large human steady-state studies show no difference in overall bioavailability between synthetic and food-derived vitamin C once intake reaches steady state. Even so, the authors still favor whole food — because even where the ascorbic acid performs equally, food sources deliver flavonoids and phytochemicals synthetic tablets don't (Carr & Vissers, 2013). Why the Matrix Matters
Vitamin C doesn't work alone in the body, and it doesn't occur alone in nature either. In acerola, ascorbic acid sits inside a matrix of bioflavonoids and polyphenols that appear to do two things: help intestinal cells pull in more vitamin C by upregulating the SVCT1 transporter, and slow the rate the body clears it back out through urine.
That lines up with older bioflavonoid research, too. Flavonoids like rutin and quercetin have long been shown to extend how long vitamin C stays active in tissue, partly by protecting it from oxidation before the body gets to use it. It's a large part of why a whole orange behaves differently in the body than a vitamin C tablet dissolved in water, even when the milligrams on the label match exactly.
None of this makes synthetic ascorbic acid useless — it does raise blood vitamin C levels, and for decades that's been the main thing measured. It just means "how much vitamin C is on the label" and "how much of it your body actually keeps" aren't always the same question.
How to Spot the Difference on a Label
A few things worth checking next time you're comparing vitamin C supplements:
Read the source, not just the milligrams. "Ascorbic acid" or "vitamin C (as ascorbic acid)" as the only listed source means it's synthetic. A named whole-food source — acerola cherry, camu camu, rose hips — means the surrounding plant matrix came with it.
Check for fillers. Whole-food vitamin C products can still be cut with synthetic ascorbic acid to hit a higher milligram number cheaply. A short ingredient list — just the fruit — is a good sign nothing was added to inflate the dose.
Don't assume "natural" on the front label means whole-food. Some products blend a small amount of acerola extract into an otherwise-synthetic formula for marketing purposes. The ingredient panel, not the front of the bottle, tells the truth.
